This matters more than it sounds, because the cold chain is usually the part of a concentrate purchase a first-time buyer has not budgeted for. The unit price is visible on the quotation. The reefer container, the bonded cold storage at destination, and your own warehouse's ability to hold sub-zero are not.

Why concentrate needs a cold chain and powder does not

The difference is water. Concentrate is a liquid with most of its water removed but not all of it, so enough available moisture remains to support microbial and enzymatic activity if the temperature climbs. Powder has been taken down to roughly 3.5% moisture, far below the level at which that activity is possible, which is what buys our coconut water powder 24 months at ambient temperature in a foil bag.

This is also why Brix and storage are the same conversation rather than two. Raising Brix removes more water, which lowers water activity and makes the product more stable, as well as lighter to ship per finished litre. What the cold chain actually asks of you

  • Reefer freight, not dry containers: Concentrate ships temperature-controlled out of Mundra or Nhava Sheva. Confirm at quotation stage whether a landed-cost figure includes reefer freight, because the gap between reefer and dry rates is wide enough to change a format decision on its own.
  • Cold storage at destination: The product has to stay inside the window from port through to your filling line. Bonded cold storage is a recurring cost rather than a one-off, and facilities that hold −18°C reliably are not available everywhere.
  • Your own receiving capability: Ask your warehouse the question before you order rather than after. A receiving bay that cannot hold sub-zero turns a 12-month shelf life into a much shorter one the moment the container doors open.
  • Thaw and refreeze discipline: Repeated thaw and refreeze cycles are the most common way a perfectly compliant batch degrades in the field. Plan draw-downs so that a drum or tote is used through rather than part-used and returned to frozen.
  • Documentation checked on arrival: The COA travelling with the shipment should carry the batch number of the material in front of you, and its manufacture and expiry dates should be consistent with the shelf life you were quoted. Packaging formats, and what each one is for

We supply concentrate in three formats. The choice is mostly about how many times a unit gets opened, because every opening event is a temperature excursion and an oxygen exposure.

  • Aseptic bag-in-box: The usual choice for buyers drawing down in moderate volumes. The liner limits oxygen ingress and the outer box palletises cleanly.
  • Drums: Suited to larger single draws where the whole unit goes into one batch. Fewer opening events across a shipment means fewer chances for an excursion.
  • IBC totes: For high-volume bottling lines feeding directly from the tote. The highest volume per handling event, and the format that most rewards a well-planned cold chain.

The comparison most buyers should actually run

Concentrate is not automatically the cheaper format once temperature control is priced in. The honest comparison is landed cost per finished litre with the cold chain included, set against the same figure for powder shipped ambient.

Powder wins that comparison more often than the unit prices suggest, particularly on long routes and into markets where cold storage is scarce or expensive. Concentrate wins where a bottling line is already configured for liquid inputs, where reconstitution is an existing step rather than a new one, or where flavour considerations favour a liquid. What is the shelf life of coconut water concentrate?

What should I do if a shipment breaks temperature in transit?
Treat it as a quality event rather than a paperwork one. Ask for the container temperature log, and have the material retested against the batch COA before it goes anywhere near production.
